  • 4 chicken breasts
  • Chorizo or longaniza
  • 1 large onion
  • 3 garlic cloves
  • 1 can of chipotle
  • 4 tomatoes
  • Tomatillo
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Vegetable oil
  • Tostadas
  • Sour cream
  • Optional: Fresh cheese, lettuce, cilantro, and onion to serve


  1. Cook the chicken breasts in a pot of water until they are fully cooked. Once cooked, remove them from the water and let them cool before shredding them.
  2. In a large pot, add a little vegetable oil and heat it over medium heat. Add the chorizo, removing the skin, and stir it to evenly distribute the flavor. Cover the pot and let it cook for about 8 minutes over low heat.
  3. Blend the tomatoes, pre-boiled, with the chipotle, garlic, and salt.
  4. Add the chopped onion to the pot and cook until it is soft and transparent. Stir well with the chorizo to concentrate flavors, then add the shredded chicken breast. Stir to combine the ingredients and cook over medium heat for 10 minutes, or until the sauce has reduced and thickened.
  5. Once the chicken, onion, and chorizo are incorporated, add the blended tomato mixture to make the tinga de pollo.
  6. Now, blend the chiles and tomatillos to make the salsa.
  7. Finally, chop the lettuce, crumble the cheese, and serve with sour cream.
