Ingredients:
- 1 whole cut up chicken
- 5 ancho chiles
- 2 pasilla chiles
- 2 árbol chiles
- 1 serrano chile
- 1 tortilla
- 1 tomato
- 1 tomatillo
- 1/2 bolillo roll
- 1/2 onion
- 2 cloves of garlic
- 10 almonds
- 20 peanuts
- cinnamon
- cloves
- Gruyere cheese
- ají seasoning
- Ibarra chocolate
- canned jalapeño peppers
- limes for soaking the onion
Instructions:
- Cut the chicken into pieces and season with salt and pepper. Set aside.
- Roast the ancho and mulato chiles over medium heat until charred. Soak in warm water until soft.
- Blend the soaked chiles with the tomatoes, chocolate, spices and raisins.
- Heat the oil in a pot and fry the chile mixture until thickened. Add the broth and let simmer.
- When the mole is ready, add the chicken and cook over low heat for 30 minutes more.
- Serve the chicken bathed in the rich red mole. Accompany with rice, tortillas or side dishes.
